ysponge cake 233 METHOD Preheat oven on CircoTherm® at 170°C and place wire rack on level 2. Grease two deep 22cm round cake tins; lightly coat the sides and base of the tins with flour and tap out the excess. Place eggs and sugar in the bowl of an electric mixer. With the whisk attachment, beat for 8 minutes or until thick and creamy. The mixture should form thick ribbons when the whisk is lifted. While beating the eggs and sugar, sift the dry ingredients twice. Sift the flour mixture on to the top Oven setting: CircoTherm® of the egg mixture. Using a large wire whisk, lightly and quickly fold the flour mixture into the egg mixture. Serves: 10–12 Pour mixture evenly into the prepared cake tins.
